Coconut Fruit Bowl + Avocado/Egg Whites Toast

This is a light, tasty meal that's perfect for breakfast or lunch!

Avo-toast:

- 1 slice of whole wheat or multi-grain bread
- 2 egg whites
- 1/2 of a whole avocado

Coconut bowls:

- 1 large coconut
- Bananas
- Blueberries
- Kiwis

Directions:

Scramble two egg whites in a pan with a very small amount of olive oil. Cut your avocado in half and remove the pit. Then, cut the half into quarter-inch thick slices. Toast your slice of bread then add your egg whites and avocado slices on top.

I know many people use knives, tools, or even machetes to open coconuts. I've always had trouble with cracking them open with knives and tools (I don't trust myself with a machete), so one day I decided to use a brick and it worked like magic.

Yes, I said a brick. I have brick exterior on my home and I just go outside, hit it hard on the edge of the brick on the spot where I want to make the first initial "crack" (which will be a pretty big one), then hit it lightly with baby taps the rest of the way around. After your large initial crack, the coconut separates itself very easily. 

Important note: make sure you drain the water before you crack it open. If not, it'll splash everywhere and you'll waste all of that yummy goodness! To drain the water, simply carve out one of the eyes, or holes, until you've cut all the way through the flesh. Then, I just turn it upside down and let it sit in a cup while the water drains.

So once you're done with all that crazy mess, simply add your fruit inside! I had a cup of hot green tea with lemon, as well.
