Earth Day Salad

I made this tasty meal in honor of Earth Day, full of lots of blues and greens - a hearty salad paired with tasty infused water!

Salad ingredients:

- Spinach
- Broccoli
- Cucumbers
- Edamame
- Blueberries
- Fresh lime juice

Infused water:

- Blueberries
- Cucumbers
- Lime
- Mint leaves

There's not much explanation needed for preparation of the salad. Simply toss all of your ingredients together in a large bowl and squeeze about one tablespoon of fresh lime juice on top.

For the infused water, I first add in my fruit to a jar. I started with my blueberries, then my mint leaves, and last but not least some cucumber slices. Next I added about 16-20 oz. of water and let it sit in the refrigerator overnight.

I thought this was the perfect meal for Earth Day because of 1.) It only consisted of blues and greens and 2.) All of the ingredients were natural and organic!
