Smoked Salmon, Avocado, and Egg Whites Sandwich

This is one of my favorite sandwich combinations ever. It's tasty and light, but will leave you feeling full and happy afterwards! I love adding avocado to any meal, and you simply cannot go wrong with some hearty avo-toast.

What you'll need:

- 1 slice of whole grain or multi-grain bread
- 1 avocado
- 2 large egg whites
- 1 or 2 slices of smoked salmon
- A (pretty big) pinch of lemongrass
- Salt and cracked pepper (to taste)
- Juice from 1/4 of a lemon

Directions:

First scramble your egg whites, seeing as this will be the longest step and the only one that requires "real" cooking.

Take one slice of bread and add 1/2 of a whole avocado on the slice. I like mine extra ripe, but you can heat it up in the microwave for a few seconds if it's not quite soft yet. Use a fork to mash down your avocado, making sure you cover the entire slice. First I mash it down using the backside of the fork, then I make it a little prettier by using the tips of the prongs to create a lattice-like pattern - first running the fork all the way across vertically, then horizontally.

Next, add your egg whites, smoked salmon, lemongrass, salt and pepper, and fresh lemon juice!

Dig in!
