Strawberry Banana Smoothie/Chia Pudding Parfait

I love, love, LOVE chia pudding because it's super tasty and easy to make! It's a frequent go-to breakfast choice of mine and I like trying it with something a little bit different each time. Y'all have probably realized by now that I'm completely obsessed with smoothies, so that's something that I like to pair with chia pudding to have myself a delicious little treat!

Smoothie ingredients:

- 1 frozen banana
- 1 cup of strawberries
- 1/4 cup of unsweetened almond milk

Chia pudding ingredients:

- 1 cup of unsweetened almond milk
- 1/2 cup of Greek yogurt
- 1/2 cup of chia seeds
- 1 tablespoon of pure maple syrup
- 1/4 teaspoon of vanilla extract

Toppings:

- Muesli
- Strawberries
- Bananas
- Mint leaves

Directions:

The first step is to prepare the chia pudding because this part takes the most time. Combine and mix all of your ingredients together and allow the mixture to sit in the refrigerator overnight. Once the next morning has arrived, you've allowed the chia pudding to sit overnight, and the seeds have soaked up the liquid to form a 'puddingy' texture, you can assemble the treat - if you prefer to make/eat it the on the same day, allow it to set for at least 5 hours.

For the smoothie, simply add all of the ingredients to a high-speed food processor or blender and pulse until smooth. To put it all together, start off by adding a layer of smoothie to a jar, followed by a layer of chia pudding and muesli and garnish it with strawberries, bananas, and mint leaves.
