Brunch so hard! This is such a delicious/nutritious brunch and surely is a must try! I eat avocado toast like it's my religion and honestly don't think I could ever get tired of it. Of course y'all know I need some sort of colorful fruit incorporated, so I paired it with some vibrant dragonfruit boats - and you can even add a mimosa to make it extra fun!
- 1 slice of whole wheat bread
- 1/2 avocado
- Juice from 1/2 lemon
- Cracked red pepper (to taste)
- Fresh lime juice
Begin by toasting one slice of whole wheat bread. Once toasted, cut your avocado into 1/4" thick wedges and add it on top of the toast, along with a squeeze of fresh lemon juice and some cracked red pepper.
For the dragonfruit boats, begin by cutting one dragonfruit in half. Use a miniature ice cream scooper to scoop out the inside of the dragonfruit into little balls. Add these 'fruit balls' back into the boats, along with some fresh strawberries, blueberries, kiwis and a squeeze of lime juice.
